PRODUCT FAQs
Can I wash my Haiku and Chroma knives in the dishwasher?
No, Hiaku and Chroma knives are not dishwasher safe. Aggressive detergents and heat from the dishwasher damage the steel and the honoki wood. Please wash the knife in warm water and dry it by hand after each use. Such care insures life-long reliability of HAIKU and Chroma knives.
Is it safe for me to use the HAIKU knives on bones?
No, do not cut bone or any other hard materials with our HAIKU knives. A cleaver should be used for such tasks.
Is it alright to use a sharpening steel for my knives?
No, the use of a sharpening steel will damage the blade of the knife. We recommend only using a water or oil stone for sharpening knives. Take a look at our collection of sharpening stones inside the cutlery pages.
What type of cutting boards are safe to use?
We recommend using only wooden or plastic cutting boards rather than marble or glass. Marble and glass cutting boards can damage the blade of a knife.
What makes Japanese knives so unique?
Different from western knives, Japanese knives are often ground (sharpened) in a way that only one side holds the cutting edge (or bevel). Some Japanese knives are angled from both sides, and others are angled only from one side, with the other side of the blade being flat. It is believed that a blade angled on only one side (rather than both sides) cuts better, making cleaner cuts; however, requires more skill in its use than a blade angled on both sides.
Why is bamboo a superior product over pine or maple wood cutting boards?
Boards constructed of bamboo are fast (the hard surface makes it easier to work the knife) and durable. The boards absorb less liquid than maple wood and are typically easier to wash since the knife cuts won't be as deep. Like other wood boards, they should not be soaked in water or placed in the dishwasher.
